Like many other vines, the Merlot originated in the Bordeaux region of France. First reports of its introduction into Italy date back to the first half of the 1800s. It is one of the most widely-found vines in the world.

TERROIR
Clayey, silty and slightly alkaline.

RED WINE PRODUCTION
Maceration for 25-30 days at a controlled temperature of 24/28°C. Pump-overs are done with oxygen addition and followed by soft pressing. Being a full-bodied and tannic wine, after the fermentation it is refined through micro-oxygenator. This process softens tannins and imparts elegance into the wine.

ORGANOLEPTIC QUALITIES
A full-bodied, hearty, richly-colored wine characterized by an intense vinous fragrance with grassy undertones. The nose is also rich in fruity aromas such as cherry and blackcurrant. It is ruby red when young and tends with aging to a granate red color. With maturation it becomes more refined and developes a pleasing bouquet and very harmonious, balanced and dry taste.

TO ADD TO
You can drink it all through the meal. It suits especially well with charcuterie, stewed meal, red and white roast meat, and particularly rabbit meat and poultry.
