FERMENTATION
In small tanks with a maximum capacity of 40/80 quintals for a period of approx. 40 days at a temperature of 16/17°C until reaching 5.5ATM with a sweetness grade of 1.1

ORGANOLEPTIC QUALITIES
Straw yellow colored spumante with characteristic bouquet of apple, almond and wisteria. Delicate, balanced flavor. Abundant effervescence with continuous, very fine-grain perlage.
